This beautiful spring salad packs lots of protein and healthful nutrients. The dressing is made with Lindera Farms Honey Vinegar, a beauitfully balanced acid.

Baby lettuces with almonds, avocados and olives
Serves 8

⅓ cup honey vinegar
¼ cup whole grain mustard
1 small shallot, minced
½ cup olive oil
Kosher salt and freshly ground black pepper
12 oz mixed baby lettuce greens
1 cup almonds, toasted and chopped
1 cup castelvetrano olives, pitted
2/4 cup dried cranberries
2 avocados, diced
Coarse sea salt and freshly ground black pepper

1. To make vinaigrette, combine vinegar, mustard, shallot, salt and pepper in a small bowl; in a slow and steady stream, pour oil into vinaigrette base while whisking vigorously in order to emulsify. Taste and adjust seasoning and acidity.
2. In a large mixing bowl, combine the lettuce greens, almonds, olives, cranberries and avocados with a pinch of coarse sea salt and pepper. Dress the side of the bowl with ¾ of the dressing and toss salad ingredients through that side of the bowl. Taste and add more dressing or seasoning if desired.

RETURN POLICY: We offer a full refund within 30 days for items that are damaged, faulty or unused. Proof of purchase must be provided when making a return. Please call customer service at 718.389.2982, in advance to obtain an RMA number (Return Merchandise Authorization) within 30 days of purchase date.

All Class tickets are Will-Call, your name will be placed on a list at the store, and nothing will be mailed to you. If you are thinking of purchasing a class as a gift, we encourage you to consider purchasing a gift card, which can be used towards a class that fits their schedule. Please know that if you purchase a class as a gift for someone else, the cancellation policy below will apply.

CLASS CANCELLATION POLICYIf a cancellation is made at least 3 days before the class, we will honor a store credit for the full value of the class, which can be redeemed at any time. If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
