Bean Salad with Pickled Radishes Recipe

Full of protein and lots of acid, this is a bright and easy salad that can be stretched to serve a crowd.

Product Description


Serves a small crowd or 3 growing boys

For the beans
2 cups dry beans, we used Zursun's Flageolet, but any mild bean will do
1 Bay leaf
1 small onion or shallot, just cut in quarters, root and skin intact
2 cloves garlic, delicately smashed
pinch of whole peppercorns 

For the Pickles
2 bunches radishes, sliced on a mandoline
1/2 cup white wine vinegar
1/2 cup water
2 tsp salt
2 tsp sugar

For the Salad
1/4 cup olive oil
1/4 cup white wine vinegar 
2 Tbsp dijon mustard
1/2 cup crumbled feta, plus more for snacking obviously
fistful of parsley
salt and pepper  


  1. Soak the beans in 6 cups water, they will expand considerably. Overnight is preferred, but at least 3 hours. Rinse well, and pick through for stones and rotty looking beans.
  2. To a sturdy pot, add the beans, spicings and water, with at least one full finger of water to cover. Bring to a boil and set heat to a moderate simmer. Push them too hard, and they will mush up, which is nice for a puree, but beans for a cold salad should stay intact. 
  3. Cook for about an hour, checking whilst prepping the rest of your ingredients. Beans are done when they are only slightly toothsome, as they will firm up a bit when served cold.


  1. heat vinegar, water, salt and sugar; pour over radishes and allow to pickle while the beans cook.

Assembling the salad

  1. In a large bowl, whisk vinegar, olive oil and mustard
  2. While the beans cook and the pickles pickle, chop up some parsley and crumble up the feta. Leave a few big leaves for drama.
  3. Remove the beans from the cooking liquid but don't rinse; add to the dressing bowl while still warm and work through with a spoon to cool. As the beans cool down, they will absorb some of the dressing, which helps them from getting too crunchy. Start salting to taste. Keep moving the beans around the bowl to cool them down, pile all of the other things in, and serve at room temperature. 
  4. Enjoy!
