This bright and fresh potato salad is the perfect addition to any summer meal! Pack as many herbs as you can in to give an extra brightness to this vinegar based potato salad.

Herb and Mustard Potato Salad
Serves 8

8 large yukon gold potatoes, diced
2 celery, diced
6 spring onions or scallions, thinly sliced
¾ cup dill, chopped
¾ cup parsley, chopped
½ cup mint, chopped
Kosher salt and freshly ground black pepper
¾ cup whole grain mustard
¼ cup apple cider vinegar
3 tbsp maple syrup
4 lemons, zested and juiced
1 tsp red pepper flakes

1. Place the potatoes in a large pot with salt and cover with water. Bring to a boil and reduce to a simmer; cook until tender, about 15-20 minutes. Drain and let cool slightly.
2. Place potatoes, celery, spring onions or scallions and herbs in a large mixing bowl with a generous pinch of salt and pepper.
3.  In a small mixing bowl, combine the mustard, vinegar, maple syrup, lemon juice and zest, red pepper flakes, and a pinch of salt and pepper; whisk to combine.  Dress and toss well; taste and adjust seasoning.

We determine the most efficient shipping carrier for your order. We use UPS as primary shipper, but special arrangement can be made upon request. PLEASE NOTE that if you are receiving perishable goods, someone MUST be available to receive the package.

RETURN POLICY: We offer a full refund within 30 days for items that are damaged, faulty or unused. Proof of purchase must be provided when making a return. Please call customer service at 718.389.2982, in advance to obtain an RMA number (Return Merchandise Authorization) within 30 days of purchase date.

All Class tickets are Will-Call, your name will be placed on a list at the store, and nothing will be mailed to you. If you are thinking of purchasing a class as a gift, we encourage you to consider purchasing a gift card, which can be used towards a class that fits their schedule. Please know that if you purchase a class as a gift for someone else, the cancellation policy below will apply.

CLASS CANCELLATION POLICYIf a cancellation is made at least 3 days before the class, we will honor a store credit for the full value of the class, which can be redeemed at any time. If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
