This perfect spring salad is light and fresh but satisfying enough to be a complete meal. The grapefruit and fresh herbs cut the salty fattiness of the halloumi, while the toasted cumin seeds and almonds add a nice savory depth.

Toasted Cumin Dressing
1 tsp cumin seeds
Juice of 1 lime
1 tsp agave
3 Tbsp olive oil
black pepper
generous pinch of salt

Salad
1 grapefruit, supremed
4 oz halloumi cheese, sliced 1/4 inch thick
1/3 cup raw, unsalted almonds, roughly chopped
3 cups salad greens
1/2 cup chopped cilantro
1/4 cup chopped mint

Toast the cumin seeds in a dry pan over medium heat. Whisk together lime juice, agave, salt, pepper and cumin seeds. Drizzle in olive oil and whisk to incorporate. In the same pan used to toast the cumin seeds, toast the chopped almonds until slightly golden brown, about 6 minutes. Place a large cast iron skillet over medium heat. Add 2 tsp canola oil. Grill the halloumi slices until golden brown on both sides, about 4 minutes per side. Toss the salad greens and herbs in the cumin dressing. Arrange on a large platter, and top with grapefruit segments, halloumi bits and almonds.

Enjoy while the halloumi is still warm.

RETURN POLICY: We offer a full refund within 30 days for items that are damaged, faulty or unused. Proof of purchase must be provided when making a return. Please call customer service at 718.389.2982, in advance to obtain an RMA number (Return Merchandise Authorization) within 30 days of purchase date.

All Class tickets are Will-Call, your name will be placed on a list at the store, and nothing will be mailed to you. If you are thinking of purchasing a class as a gift, we encourage you to consider purchasing a gift card, which can be used towards a class that fits their schedule. Please know that if you purchase a class as a gift for someone else, the cancellation policy below will apply.

CLASS CANCELLATION POLICYIf a cancellation is made at least 3 days before the class, we will honor a store credit for the full value of the class, which can be redeemed at any time. If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
