Many recipes include strong cheeses and basil, but we wanted to showcase the brightness and sweetness of the tomato. Great on it's own, this pie also pairs well with a poached egg and makes for a marvelous breakfast. The tender center is a perfect contrast to the flaky and crisp crust. We suggest placing your pie on the lowest possible rack of your oven to ensure that the bottom of the crust cooks thoroughly.

    While it's an obvious choice to make lemon curd, a perfectly balanced spread of sunshine, it's a standby for a reason. We also made a lime curd and then took it a few steps further with a blood orange curd. The technique of making a citrus curd is standard and very similar to making pastry cream. Plus, it's infinitely adaptable.

    Lemon curd was originally milk was acidulated with lemon juice, then separated from the whey with cheesecloth, resulting in something similar to ricotta. We're glad that the recipe has evolved into the creamy custard we love.
