Hand pies are one of our favorite desserts because the crust-to-filling ratio is out of this world. Make sure you cook down the filling so that the apples get nice and caramelly, plus it smells amazing.

Chai Spiced Apple Hand Pies
Serves 8

6 apples, cut in 1/4 inch cubes
3/4 cup brown sugar
1/2 tbsp lemon juice
1/2 tbsp lemon zest
2 tsp vanilla extract or paste
2 tsp ground ginger
2 tsp ground cinnamon
2 tsp ground cardamom
1 tsp ground cloves
1 tsp allspice
1 stick butter
300 g flour
200 g butter, cubed and chilled
100 g ice water
1 tsp salt
15 g sugar
1 egg
2 tsp sugar
1 tbsp water
Finishing sugar, for garnish

1. In a large mixing bowl, combine apples, sugar, lemon juice and zest, and spices. Cover and set aside to allow time to macerate.
2. In the base of a food processor, pulse together flour, salt and sugar until well combined. Add butter and pulse until butter cubes are coated in flour and are about the size of peas. Slowly pulse in ice water 1 tbsp at a time until dough pulls away from the sides of the container and forms a stiff ball. Quickly transfer to a flat surface, coat with flour, wrap in plastic and place in refrigerator for 20 minutes.
3. In the meantime, transfer apple mixture to a large sauce pan and simmer for 15 minutes, or until apples begin to breakdown and mixture resembles a paste. Add butter and stir until completely melted. Place in the refrigerator to set.  
4. Preheat oven to 375 degrees. Once dough is chilled, place on a floured surface and roll out. Intermittently turn the dough 45 degrees to ensure the dough hasn't stuck to your work surface. Cut into 4-5 inch circles. Fill half of each circle with 2 tbsp apple filling, making sure to leave a small border around the outside of the crust. Brush the inside lip of the dough with egg wash and fold in half. Crimp the outer edges with a fork. Finish each pie with additional egg wash and finishing sugar. Transfer to a parchment lined baking sheet and bake for 15 minutes or until golden brown. Serve immediately.

If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
