This classic recipe is perfect for seared steak, but also works wonders with grilled or roasted chicken, pork or fish. They key is to taste as you go to know how much more seasoning or acid to add.

Bavette Steak with Chimichurri
Serves 8
3-4 tbsp grapeseed oil
3 lbs bavette steak, divided into 6 oz portions, at room temperature
kosher salt and freshly ground pepper

1. Preheat the oven to 375 degrees F.  Place a large cast iron skillet over high heat and add oil.  Dry the steaks with a paper towel and generously season with salt and pepper.  When oil is smoking, gently place half of the steak portions in the skillet (in order to achieve a caramelized crust, the pan needs to maintain a high heat so do not overcrowd the pan and leave space in between the steak portions). Allow steak to cook undisturbed for 2 minutes, then check for a golden sear.  
2. When steak is browned, about 3-5 minutes, flip and cook on other side for another 3-5 minutes for medium rare. Transfer to a sheet tray with a rack and repeat with remaining steak.  When all the steak is browned and on the sheet tray, place the tray in the oven and cook steaks until the internal temperature reaches 140 (medium rare) in the thickest part of the steak, about 5 minutes.  Remove from oven, rest 10 minutes, then slice against grain and serve with chimichurri.

½ cup red wine vinegar
4 cloves garlic, sliced
1 shallot, minced
Pinch kosher salt
Pinch sugar
1 cup chopped cilantro, minced
½ cup chopped flat leaf parsley, minced
1 tsp ground cumin
1 tsp red chili flake
1 lemon, zested and juiced
¾ cup extra virgin olive oil

1. In a small mixing bowl, combine the red wine vinegar, garlic and shallot with a small pinch of salt a sugar; let sit out for 10 minutes to lightly pickle. Add the cilantro, parsley, cumin, red chili and lemon juice and zest; mix well.  Add a pinch of salt and the olive oil and mix again; taste and adjust seasoning.
