This is the perfect recipe for a summer night. Easy, refreshing, and delicious. Much of the work happens two hours before cooking takes place, making these a great dish for company.

Grilled Peach Skewers with Ginger Soy Pork

⅓ cup soy sauce
¼ cup olive oil
2 tbsp peach preserves
3 tbsp lime juice
2 cloves garlic, minced
1 onion, minced
½ cup brown sugar
1 tbsp coriander, toasted and ground
2 tsp freshly ground black pepper
1 tsp ground ginger

2 lbs pork tenderloin, cut into ½” cubes
6 peaches, wedged
About ⅓ cup grapeseed oil
Kosher salt
1 cup cilantro leaves, cleaned and chopped

1. Combine the marinade ingredients in a mixing bowl and stir well. Place the pork in a ziplock bag or baking dish and pour marinade over. Cover and place in refrigerator for 2 hours to marinate. Place skewers in water and let soak 2 hours so they will not burn.
2. Remove pork from refrigerator, remove meat from marinade and dry gently with paper towels; bring to room temperature to allow for proper cooking. Preheat a grill or grill pan over medium high heat.  
3. Skewer peaches and alternating each; drizzle with grapeseed oil and season with salt. Place on grill or grill pan and cook until meat is cooked through, about 8-10 minutes, flipping halfway through. Remove from heat, top with cilantro, and serve immediately.

CLASS CANCELLATION POLICYIf a cancellation is made at least 3 days before the class, we will honor a store credit for the full value of the class, which can be redeemed at any time. If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
