Moroccan Baked Eggs with Harissa
Serves 8

2 tbsp olive oil
1 onion, diced
4 cloves garlic, chopped
Kosher salt and freshly ground black pepper
1 tbsp harissa
1 tbsp Charissa seasoning
1 tsp tomato paste
1 28oz can crushed tomatoes
4 oz feta
8 eggs
2 tbsp cilantro, parsley or oregano leaves, chopped

1. Preheat an oven to 375 degrees F.
2. Place a cast iron skillet over medium heat and add oil. When oil is shimmering, add onion and saute until softened, about 4 minutes.  Add garlic, a generous pinch of salt and pepper, harissa, Charissa, and tomato paste; saute until fragrant, about 2 minutes.  Add tomatoes and bring to a simmer. Cook at a gentle simmer until thickened, about 6 minutes.  
3. Remove from heat, stir in feta and taste to adjust seasoning.  Use a spoon to dimple 8 shallow spots for the eggs; crack an egg into each spot and season with a small pinch of salt. Transfer to the oven and cook until eggs are cooked through, about 8 minutes.  Remove from oven and garnish with herbs; serve immediately.

RETURN POLICY: We offer a full refund within 30 days for items that are damaged, faulty or unused. Proof of purchase must be provided when making a return. Please call customer service at 718.389.2982, in advance to obtain an RMA number (Return Merchandise Authorization) within 30 days of purchase date.

All Class tickets are Will-Call, your name will be placed on a list at the store, and nothing will be mailed to you. If you are thinking of purchasing a class as a gift, we encourage you to consider purchasing a gift card, which can be used towards a class that fits their schedule. Please know that if you purchase a class as a gift for someone else, the cancellation policy below will apply.

CLASS CANCELLATION POLICYIf a cancellation is made at least 3 days before the class, we will honor a store credit for the full value of the class, which can be redeemed at any time. If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
