Homemade pasta dough is one of the most simple yet special treats you can make in the kitchen! Bring your weeknight meal up a few notches by preparing this dough yourself and pairing with your favorite herb, tomato, or butter and cheese sauce.

Serves 8
Time: about 10 minutes active, 1 hour inactive

Product Description


Basic Pasta Dough
Serves 4-6

10 oz flour (about 2 cups)
1 tsp salt
2 whole eggs
4 egg yolks

The dough can made up to 3 days in advance, wrapped in plastic wrap and held in the refrigerator

By hand:
1. On a flat surface, mound the flour with salt and make a well in the center.
2. Crack the eggs into the center, and add the olive oil.  
3. With a fork or your fingertips, whisk the eggs and oil together.
4. Gradually incorporate the flour from around the center, whisking the lumps out.
5. Stir with a fork until you can no longer.
6. Knead the dough, gradually adding flour until you have a firm and even dough that has a bit of elasticity. Only add a little bit of water if the dough feels very dry.
7. Flatten it into a disc, wrap in plastic wrap, and chill in the fridge for 1 hour.

In the food processor:
1. Combine the eggs, salt, and extra virgin olive oil. Blend until completely smooth and aerated.
2. Remove the lid and add all of the flour, pulsing until it combines. The mix should resemble coarse meal.
3. Add about 1-2 tbs. cold water; pulse until a ball forms.
4. Knead the dough on a floured surface until it comes together in a smooth ball. Only add a little bit of additional water if the dough feels very dry. Flatten it into a disc, wrap in plastic wrap, and chill in the fridge for 1 hour.

RETURN POLICY: We offer a full refund within 30 days for items that are damaged, faulty or unused. Proof of purchase must be provided when making a return. Please call customer service at 718.389.2982, in advance to obtain an RMA number (Return Merchandise Authorization) within 30 days of purchase date.

All Class tickets are Will-Call, your name will be placed on a list at the store, and nothing will be mailed to you. If you are thinking of purchasing a class as a gift, we encourage you to consider purchasing a gift card, which can be used towards a class that fits their schedule. Please know that if you purchase a class as a gift for someone else, the cancellation policy below will apply.

CLASS CANCELLATION POLICYIf a cancellation is made at least 3 days before the class, we will honor a store credit for the full value of the class, which can be redeemed at any time. If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
