Take a break from your boring workaday life and pretend that you are down in the Big Easy. You're feeling the heat, the humidity, and you know that the spice in this dish can only cool you down from the inside out. 


Grits, cheese, shrimp, bacon and spices? This is going to be all right.

Details

3 cups water
3 cups milk
1 ½ cups stone-ground grits
Kosher salt and freshly ground black pepper
1 cup sharp cheddar cheese
4 tbsp butter
½ lb bacon, chopped
3 lbs shrimp, peeled and deveined
Juice of 1 lemon
1 bunch scallions, minced

1. In a medium saucepan, bring the water and milk to a boil. While whisking, add the grits in a steady stream. Bring the heat down to low and continue to whisk periodically (careful, as the grits tend to splatter). Check for doneness around 20 minutes; the grits should be smooth and not gritty.

2. Meanwhile, add the bacon to large skillet and then place over medium heat. Cook, while stirring occasionally, until bacon is crispy; then use a slotted spoon to transfer the bacon to a paper towel-lined plate. Drain off all but 2 tbsp of bacon grease.

3. Add the shrimp to the bacon grease and cook until pink all the way through, about 2-3 minutes. Add the lemon juice.

4. Once the grits are fully cooked, stir in the salt, pepper, cheddar cheese, and butter and whisk vigorously to combine. Taste and adjusting seasoning as necessary.

5. Place the grits in a serving dish and top with sauteed shrimp; garnish with bacon and scallion.

Once your order has shipped, tracking information will be provided.

We determine the most efficient shipping carrier for your order. We use UPS as primary shipper, but special arrangement can be made upon request. PLEASE NOTE that if you are receiving perishable goods, someone MUST be available to receive the package.

RETURN POLICY: We offer a full refund within 30 days for items that are damaged, faulty or unused. Proof of purchase must be provided when making a return. Please call customer service at 718.389.2982, in advance to obtain an RMA number (Return Merchandise Authorization) within 30 days of purchase date.

All Class tickets are Will-Call, your name will be placed on a list at the store, and nothing will be mailed to you. If you are thinking of purchasing a class as a gift, we encourage you to consider purchasing a gift card, which can be used towards a class that fits their schedule. Please know that if you purchase a class as a gift for someone else, the cancellation policy below will apply.

CLASS CANCELLATION POLICYIf a cancellation is made at least 3 days before the class, we will honor a store credit for the full value of the class, which can be redeemed at any time. If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
