This recipe is from a Facebook Live video with Country Living Magazine! Here's the video. While these are adorable, the best thing about them is that they're delicious. The lemon curd strikes the perfect balance between sweet and sour.

Lemon Meringue Pie Mason Jar
Serves 8

For the crust:
1 package Effie’s Oatcakes
8 Tbsp melted butter

For the curd:
3 lemons, juiced and zested
8 Tbsp butter, room temperature
1 ½ cup sugar
4 whole eggs
Pinch of salt

For the Meringue:
3 egg whites
¼ tsp cream of tartar
¾ cup confectioners sugar

1. Preheat the oven to 325. Combine Effie’s Oatcakes and melted butter in a food processor and pulse until combined and texture resembles wet sand. Divide into four mason jars and press to form a crust. Bake for 10 minutes, or until golden brown.
2. Cream together the butter, sugar and lemon zest in a food processor until pale and fluffy. Add eggs one at a time, pulsing between each addition. Slowly add lemon juice and salt and pulse to combine. Transfer mixture to saucepan and cook until thickened, about 10 minutes. Transfer to a bowl over another bowl of ice water and whisk to cool to room temp.  Transfer curd to a piping bag and set aside in refrigerator.
3. Whip egg whites, cream of tartar and confectioners sugar in a stand mixture at high speed until stiff peaks form;l transfer meringue to a piping bag.
4. To assemble Lemon Meringue Pie Mason Jars, begin by piping a layer of curd directly on top of pre-baked crust. Fill about ¾ of the jar, and top the rest with prepared meringue. Place jars directly in the oven and bake until set, about 8 minutes. Enjoy!

RETURN POLICY: We offer a full refund within 30 days for items that are damaged, faulty or unused. Proof of purchase must be provided when making a return. Please call customer service at 718.389.2982, in advance to obtain an RMA number (Return Merchandise Authorization) within 30 days of purchase date.

All Class tickets are Will-Call, your name will be placed on a list at the store, and nothing will be mailed to you. If you are thinking of purchasing a class as a gift, we encourage you to consider purchasing a gift card, which can be used towards a class that fits their schedule. Please know that if you purchase a class as a gift for someone else, the cancellation policy below will apply.

CLASS CANCELLATION POLICYIf a cancellation is made at least 3 days before the class, we will honor a store credit for the full value of the class, which can be redeemed at any time. If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
