Southern Style Baked Eggs in a Mason Jar

This recipe is from a Facebook Live video with Country Living Magazine! Here's the video. We love these baked eggs because they cook much quicker than a large batch!

Southern Style Baked Eggs in a Mason Jar
Serves 4

¼ lb bacon, cut into small cubes
Grapeseed oil
1 bunch collard greens, thinly sliced
Kosher salt and freshly ground black pepper
2-4 tbsp apple cider (or water)
1 loaf day old bread (sourdough, whole wheat, or white)
1 (28 oz) can tomatoes, drained and pureed
½ cup pecorino or parmesan cheese, finely grated
4 eggs

1. Preheat oven to 350 degrees F.  Place a medium saucepan over medium heat and add enough oil to thinly coat the bottom of the pan. Add the bacon and cook until fat renders and bacon crisps a bit, about 7 minutes.  Add the collards and season with salt and pepper. Cook for 2 minutes, stirring often, then add 2 tbsp apple cider or water and cover to let steam for 2 more minutes.  Remove cover and continue to saute until greens are tender and dark, adding more apple cider if needed. Remove from heat and let cool.
2. Use the top of the mason jar to cut out 8 circles of bread.
3. To assemble, place 1 slice of bread on the bottom of the jars. Follow with about 1 ½ tbsp of greens, then 1 ½ tbsp of tomatoes, then 1 tbsp of cheese.  Follow with another round of bread, then greens, then tomatoes, then cheese, leaving enough room on the top for an egg.  Crack 1 egg into the top of each jar.
4.  Place the jars in a deep baking dish and fill halfway up with water.  Place dish in the oven and cook until egg is cooked through, about 10-14 minutes.

If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
